Nothing beats a warm, hearty bowl of chili when you’re craving comfort food. Packed with bold spices, tender meat, and rich, savory flavors, chili is the ultimate one-pot meal that’s easy to make and endlessly versatile. Whether you’re feeding a crowd, meal prepping for the week, or simply looking for a cozy dinner, this chili recipe is guaranteed to satisfy every time!

Ingredients
1 lb ground beef or chuck (or ground turkey)
2 dried Ancho chiles
2 dried Guajillo chiles
1 dried Pasilla chile (or substitute with Mulato chile)
1 small onion, finely diced
2 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1 (15 oz) can pinto or black beans, drained and rinsed (optional)
1 tbsp tomato paste
2 cups beef or chicken broth
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional, for heat)
1 tsp oregano
1 tbsp apple cider vinegar
Salt and pepper to taste
Optional toppings: diced avocado, shredded cheese, sour cream, fresh cilantro
Preparation
Instructions:
Toast the Chiles: Heat a dry skillet over medium heat. Add the dried chiles and toast them for about 30 seconds on each side until fragrant, being careful not to burn them.
Rehydrate the Chiles: Remove the stems and seeds from the chiles. Place them in a bowl and cover with hot water. Let them soak for 10-15 minutes until soft.
Blend the Chiles: Drain the chiles and add them to a blender or food processor along with 1/2 cup of the broth. Blend until smooth to create a chile paste. Set aside.
Cook the Meat: In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
Sauté the Aromatics: Add the onion and garlic to the pot with the cooked meat. Sauté for 3-4 minutes until softened and fragrant.
Combine Ingredients: Stir in the chile paste, diced tomatoes, tomato paste, cumin, smoked paprika, cayenne (if using), and oregano. Mix well to coat the meat and onions in the flavorful paste.
Add Broth: Pour in the remaining broth and bring the mixture to a simmer. If using beans, add them at this stage.
Simmer: Reduce the heat to low and let the chili simmer uncovered for 30-40 minutes, stirring occasionally, until thickened and flavors meld together.
Add Vinegar and Adjust Seasoning: Stir in the apple cider vinegar, taste, and adjust seasoning with salt and pepper as needed.
Serve: Ladle the chili into bowls and top with your favorite garnishes like diced avocado, sour cream, shredded cheese, or cilantro. Serve with warm cornbread or tortilla chips.
